Ok, first let me say that i'm very ignorant when it comes to double barrel shotguns so excuse any obvious mistakes that I may make. I suspect the $1,500-$2,000 guns you saw are higher grade 'sidelock' action designs. They certainly should be at those prices. Look again at the proof marks, you should see a single digit letter followed by a single digit number, such as F1, which means the gun was proofed in 1960, G1 means 1961, H1 means 1962, etc.
Given that it's a 12 gauge, it appears to be in good condition, my guess would be $600-$800 at retail. VS made both entry level guns, which is about what you have, and higher grade guns, such as the sidelock designs mentioned. They are usually well made guns. They were known as 'The Gunmaker To The Kings', the kings of Spain that is. The 12-70 means 12 guage, 70mm (2 3/4') chamber length so it takes shells up to that length. 850 kgs is the proof pressure level it was tested for. There will also be a date code on the flats inside the action which can be used to tell when it was made (probably mid to later 1900s) basically; use non-magnum 2 3/4' (or lower pressure) shells. Light to medium loads will keep both you and the gun happiest and do a fine job on the receiving end.
Sarasqueta was a good maker of mostly midrange shotguns that are considered to be good values for the money. You need to give a better description, and/or pictures of the gun and the action before anyone can tell you which model it likely is. I assume it is a SxS (they did make some O/U target guns). Is it a boxlock, or sidelock? The company made mostly boxlock guns with many of them having false sideplates that make them look like sidelocks. Single trigger or double triggers?
